This delicious and healthy Chicken Fajita Bowl is an easy meal to make on all those busy weekdays! Made with tender, juicy chicken, fluffy rice or quinia, black beans, fresh fajita veggies, like red, yellow, orange, green bell peppers and all the best fajita bowl toppings. Like Cilantro and homemade zesy dressing and homemade gluten free tortillas. The whole family can build their bowl any way they want!
Homemade taco seasoning too!
Ingredients
Fajita Chicken:
3 teaspoons chili powder
1 1/2 teaspoons kosher salt
1 teaspoon paprika (smoked paprika, if you can find it)
1 teaspoon onion powder
1 teaspoon garlic powder
3 teaspoons ground cumin
1 teaspoon dried oregano leaves
1/4 teaspoon ground black pepper
1–2 tablespoons lime juice
3–4 tablespoons extra virgin olive oil
(optional) 1-2 tablespoons fresh cilantro, chopped
4 boneless skinless chicken breast, cut into tenders
Fajita Veggies:
2–3 tablespoons chicken broth, more if needed
1 tablespoon garlic, minced
1/2 red onion, sliced
1/2 yellow onion, sliced
3 bell peppers (red, green, orange), sliced
2 tablespoons fajita seasoning
additional kosher salt and ground black pepper, to taste
Chicken Fajita Bowl:
cilantro lime rice (homemade or store-bought)
tortillas of your choice, warmed
cilantro lime sauce
guacamole or avocado chunks
lime wedges
fresh cilantro
Dressing"
2 Tablespoon olive oil
1 large lime
1 tsp. pure maple syurp
1 clove garlic
nstructions
Heat 2 tablespoons of avacodo oil in a large skillet over medium-high heat. Add bell peppers and onion, sauté until tender. Season with ½ teaspoon salt.
In a separate skillet, heat the remaining 1 tablespoon of avocado oil. Add chicken tenderloins and cook until browned and fully cooked.
Sprinkle chicken with the homemade fajita seasoning and cook for an additional 2 minutes, ensuring the chicken is well-coated with spices.
Prepare white rice according to package instructions. Mix cooked rice with lime juice or quinoa and chopped cilantro
Assemble the bowls: start with a bed of lettuce, add a scoop of cilantro-lime rice, top with seasoned chicken, black beans, sautéed peppers and onions, dairy free sour cream, and smashed avocado. and torillas and cilantro. Drizzle with homemade dressing.
